Lime Coconut Margarita

 

In celebration of our home town, Cape Town, being named by the New York Times as the number one destination to visit, we thought we needed a cocktail to celebrate.

Kick back and enjoy the view with our lime and coconut cocktail.

SERVES 4

1½ cup lime juice

2½ cups coconut cream

1 cup tequila

½ cup simple syrup {instructions below}

ice

fresh lime slices {for garnish}

coconut shavings {for garnish}

 

SIMPLE SYRUP

1 cup sugar

1 cup water

  1. In a pot add the sugar and water together and place over heat and stir until the sugar is dissolved. Take the pot of the heat and cool. The extra syrup can be kept in the fridge.
  1. Place all the ingredients for the margarita in a blender and blend until smooth. Divide between glasses and serve with a fresh lime slice on the side.
