Thai Chicken Coconut Soup {Winter Warmer}


Weather forecast – Rainy with a chance of Thai chicken coconut soup.

We gearing up for the coldest weekend of winter. Today’s recipe will only take 30 minutes away from your duvet time and is delicious to enjoy under the covers in front of a cosy fire.



Serves 4

4 Boneless chicken fillets
1 tin coconut cream
2 red chilies
1 stem lemongrass
1 tsp fish sauce
250 ml fish stock
1 tsp lime juice

Finely sliced red onion
Finely chopped spring onion
Sliced Chilies
Sliced lime

Place all ingredients in a heavy bottom sauce pan and bring to the boil. Turn the heat down to a slow boil. Cook for 15 minutes until the chicken is tender.

Serve hot with garnishes sprinkled on top.
