Bean Boccocini Salad

Prep time: 20 minutes

Serves 4 as a starter or side salad



1  can cannellini beans, rinsed and drained

1 can kidney beans, rinsed and drained

200 g green beans, sliced at a slant

4 mini cucumber, cut in half at a slant

2 packs baby vegetable mix

1 can corn, drained

100 g heirloom tomatoes, cut in half

250 g boccocini, cut in half

1 tsp olive oil

20 ml apple cider vinegar


For the dressing:

2 tbsp pesto

1/3 cup apple cider vinegar

150 ml greek yoghurt

1 1/2 teaspoons salt

1/4 teaspoon black pepper
Place all the ingredients for the salad in a bowl and mix with the olive oil and apple cider vinegar.  In a small bowl mix the ingredients for the dressing. Arrange the salad on a plate and place a bowl of dressing on the side.
