Beef Roast with Nasturtium Salad

1.5 kg topside of beef

2 medium red onions

2 carrots

2 sticks celery

1 bulb of garlic

1 bunch of mixed fresh Italian herbs, finely chopped

olive oil



2 big bunches of Nasturtiums, leaves and flowers

200 g rocket

salt and pepper

Preheat oven to 240 C. Rub the beef with the olive oil, salt, pepper and herbs. Roughly chop the onions, carrots and celery. Place the vegetables in a roasting tray and break the garlic bulbs up and place on top of the vegetables. Place the roast on top of the vegetables.

Turn the oven down to 200 C. And place the beef in the oven, cooking for 1 hour. If you prefer it more medium rare remove after 50 minutes.

Toss all the ingredients for the salad in a bowl and serve immediately with roast beef.
